Dandelion (Taraxacum officinale) which in the ancient languages of Spanish and French means “teeth of the lion” is a magic gift from God. The dandelion wildflower is naturalized across most of Mother Earth. The hardiness zone of the dandelion is 3 to 9. This gorgeous plant could even feed a lion: just a handful of dandelion offers the equivalent of about a cup of vegetables. The nutrition from the dandelion includes proteins, in addition to carbohydrates, and even some fat. Dandelion contains vitamins A, C, and K, and minerals such as iron, calcium, magnesium, and potassium. Dandelion greens also contain vitamin E, folate, and other B vitamins. Dandelion flowers and greens are as good for the skin as for the gut. The entire plant is good for healthy vision, skin, and immunity. The dandelion plant is edible in its entirety, enjoyed raw in salads, dried, as cooked greens, in tea, with lemonade, and as a fine wine. The dandelion plant is a vital early food source for bees, butterflies, and hummingbirds. The dandelion flowers bloom in early Spring and may continue to bloom throughout Summer. The dandelion greens may remain viable through the year especially if the temperature does not go below freezing for too long. The dandelion plant likes moist, well-draining soil, and it thrives in sun and shade alike, although the bright yellow flowers will only open when they individually receive enough sunlight. Yet, rain or shine one may well enjoy a good salad of dandelion greens. Dandelions tend to form colonies of shared rhizomes. It is not uncommon for not all of the flowers of a colony to bloom at any one time. The dandelion colonies in fact share water and sunlight and together just know how to bring joy and light. Colonies of dandelions may grow and as such come to exist in precious pockets throughout an entire garden. The plant tends to grow from about a half foot to a foot in height.
