This gorgeous plant could even feed a lion:  just one cup of dandelion greens (55g) provides 25 calories, 1.5 grams of protein, 5.1 grams of carbohydrates, .4 grams of fat, vitamins A, C, and K, and minerals such as iron, calcium, magnesium, and potassium. Dandelion greens also contain vitamin E, folate, and small amounts of other B vitamins. These easy-to-grow greens are full of nutrients.
